2014 52 in 52 #5 - Baked Gnocci with tomato, bacon and mozzarella

Everything is better with bacon and cheese, right? 

I first found this recipe when I was looking on Pinterest for new recipes at my husband's request.  I am not normally a fan of tomatoes that are visible in food, but I figured that I would make a sacrifice this time because the rest of the dish sounded that it would be tasty. 

I had a semi-boring day at work today; not that I wasn't busy, just bored, so I figured making a longer recipe today would be better than saving this one for a different day where I was more stressed out during the day.  Plus all I needed to have unfrozen was some bacon that I bought yesterday.  It seemed like everything was lining up perfectly for today to make an awesome dinner.

Now the original recipe was written in grams instead of any sort of cups/ounces measurement, so I will spare you the conversion and write mine in ounces. 

This recipe has a few steps to it but the result is awesome.  It was flavorful and creamy and was an excellent answer to the need for comfort food.  A lot of the steps were completed simultaneously so overall this recipe takes a relatively short amount of time to cook. 

Baked Gnocci with tomato, bacon and mozzarella
Prep time: 10 mins
Cook time: 30 mins  

Ingredients:
8 ounces bacon, chopped into small pieces
2 cloves garlic
1 tsp smoked paprika
1 14 oz can diced tomatoes
handful cherry or grape tomatoes, halved
1 tbsp. tomato paste
1 tsp sugar
2-3 tbsp. cream
small handful fresh parsley
salt and pepper to taste
17 oz gnocci
4 oz mozzarella cheese

Heat oven to 400 degrees F.  Bring large pot of salted water to a boil. 

In high sided skillet, fry chopped bacon until crispy.  Drain excess grease.  Add garlic and paprika and fry for 30 seconds.  Add all tomatoes, tomato paste, and sugar and simmer for 5 minutes.  Remove from the heat and add cream, salt, pepper, and parsley. 

Boil gnocci until they float.  Remove from water with a spider strainer and add to sauce.   Incorporate sauce and gnocci and pour into oven safe baking dish.  Top with mozzarella cheese and bake for 10 minutes or until cheese is melted. 

Allow to sit for 5 minutes before serving.

Convalescent home

It has officially been a week since I last posted a blog.  If you start off the year with a failure, it can only get better, right? 

The fact that I missed 7 blogs is less than awesome considering that I am trying to post a blog entry everyday.  Unfortunately, for the last two weeks I have been running a convalescent home at our house.  The younger kids started getting sick a little over two weeks ago.  Runny nose, cough, congestion, etc.  Since all of my kids have horrible allergies it is often difficult to decide if they are just having regular allergies to something or if they are coming down with an actual illness.  Plus my youngest son runs a fever at the drop of a hat so it is really difficult to tell if he is sick. 

The youngest two were sick with this crud that everyone is our area seems to have starting two weeks ago, which culminated for them with a trip to our favorite pediatrician for my son to confirm an ear infection.  Yippee.  At least we are on medication and well on the way to being on the mend.  In the end of all of this horrible sickness that has been going around, he was also cutting three molars so we were all not sleeping during that time.  My youngest daughter has an incredible tolerance for pain and we never knew when she was cutting any teeth.  She slept the same and didn't put her hands in her mouth or chew on any toys or have any of the 'normal' teething symptoms.  My son is a textbook teether.  He drools, he is up for hours on end in the middle of the night, he cries, and whines and chews on everything including his hands, toys, other people's hands, etc.  Night and day difference...

When your children get sick, there is an immediate sense of dread that starts filling your house.  How long will it be until I get what they have?  I started feeling sick Saturday night after Silas's birthday party and honestly felt like I was getting the flu.  Body aches, stuffy nose, chills, etc.  I had intentions to take some Nyquil and head to bed, but Isabella had other plans.  Long story short, she and I were at the ER with a suspected broken arm for awhile that night.   I will insert here that some day I will post about how the diagnosis of her broken arm came about but right now it is too new and I have so much anger and guilt about it, that it is not healthy to talk about it.  I will leave it that we were able to confirm a break, she is in a cast for four weeks and she doesn't seem to even notice.  I slept well that night when we got home but still felt awful the next day.  I was sure that the flu had settled over me.  I laid on the couch for most of the day and tried to think about not feeling like death warmed over. 

Rarely do I actually get sick.  I will get a minor case of the allergies every so often, but I usually only get sick like this once every couple of years and it is miserable.  This is the first time that I have been sick like this since my younger children were born and it is less than awesome when you have to take care of other human beings while you are feeling like you want to climb in a hole and sleep for days.  I am honestly just now starting to feel better. 

This week is a new week and I am determined to make it better than last week.  I am going to leave behind the awful feelings of last week with being sick and dealing with several doctors appointments for my daughter and make this upcoming week better.  I have several awesome posts coming this week about Silas's birthday party and some new recipes that I am excited to try for this month.  I did my monthly grocery shopping today and am excited to share my meal plan and what we bought for this month.  I have been in a funk with cooking recently but am back on the cooking wagon.

2014 - 52 in 52 #4 - Balloon Banner

I always want to do something cute for a decoration for my children's birthday parties.  I like to make a 'Happy Birthday' banner but it is so time consuming and we end up throwing it away after the party, which is entirely too wasteful for me to feel comfortable with.  I was looking for something else that looked cool, was creative and relatively easy. 

I found this pin over a year ago and knew that I wanted to give it a try.  I mean, it looked easy and festive and may be just the thing that I was looking for. 

The first time that I tried it was at Isabella's rainbow birthday party.  I bought all the different colored balloons without thinking how I was going to get them blown up.  I didn't want to rent a helium tank because I didn't need them to stand up on their own and that just seemed like a waste.  Luckily, my genius hubby came up with the idea to blow them up with an air compressor - this turned into an amazing idea!  It was fast and didn't require me to lose all oxygen in my body blowing up 48 or so balloons.  The banner went together easily, stayed together and the balloons remained inflated in my other daughter's room for at least a month, which was nice. 

I decided to try again with my son's second birthday party.  I knew this time I wanted to make a spiral balloon banner.  I had several problems with my son's balloon banner but they were all in my preparation.  I didn't buy the same brand of balloons so it was hard to get them blown up evenly, and I didn't watch to ensure that they were blowing up to be the same size.  If the balloons are not the same size, then they don't fit together properly in the banner, which is frustrating.  However, if you follow the steps outlined below, you are guaranteed to end up with a cool looking balloon banner. 

Balloon banner

You will need 48 balloons, and some string to make this banner.  Because I always have leftover string that I use to wrap presents, I just used that.  You can use anything that resembles string, yarn, twine, etc. 

The first step is to blow up all of your balloons.  Ensure that they are the same size and shape. 















Next, tie the ends of two balloons together. 




















Next, you will tie two pairs of balloons together. 



















The next step will be different depending on which type of banner you are making.  If you want to recreate one like the rainbow then you would just place one set of a certain color on top of the same color.  You will need to turn the second set just a bit to ensure that they fit down inside of the first set.  I usually just wrap the string around both sets from top to bottom, but there is no set way to tie it together.  As long as they are wrapped together strong enough to keep it steady and held together. 















If you are making the spiral banner you will ensure that you use four colors, that each color is always in the same spot within the four tied together balloons and that each time you go to tie one set of four balloons to the stack that you rotate the color always the same direction. 
















Repeat until you have all of your balloons strung together in the banner and hang up at your party!

2014 52 in 52 #3 - Bacon Wrapped Lil' Smokies

Bacon, lil' smokies, butter and brown sugar... if you don't love that combination then you need serious mental help.  And you should definitely stop reading because you will be greatly disappointed. 

Hubby was the first one to alert me to this recipe.  I filed it away for another time when we were having a party or get together with friends.  This is definitely a 'man' recipe.  Anything covered in butter and bacon attracts men like flies. 

I am always on the look for appetizers and snacks for the kid's birthday parties.  I like to serve several different appetizers and snacks in lieu of a meal, that way people are destined to find something that they like.  I originally made this recipe for Isabella's third birthday party and it was okay.  There were several people who ranted and raved about it but I knew that it could be better.  If you make it like the recipe states it kind of swims in the syrup created by the butter and sugar and the bacon will never look or taste like it is cooked.  I definitely wanted that to be different. 

For Silas's second birthday, I made it again and this time, I think, it turned out a lot better.  I played with the ratio of brown sugar and butter and we changed the heat settings on the oven in an attempt to cook the bacon on the outside a bit more.

Bacon Wrapped Lil' Smokies
Prep time: 15 mins
Cook time: 30 mins

Ingredients:
2 packages of lil' smokies
1 and 1/2lb thin sliced bacon
1/2 stick butter, melted
1 and 2/3 cup brown sugar, divided

Instructions:
Preheat oven to 375 degrees.  Cut bacon strips into thirds.  Wrap bacon around each lil' smoky and place in ungreased 8x8 pan.  I used an 8x8 and a 9x9 this time in order to fit all of the lil' smokies in.  You can also use a 13x9 but I found that they didn't all fit without overlapping and that created soggy bacon.  Combine melted butter and 1 cup brown sugar together.  Spread evenly on top of bacon wrapped sausages.  Crumble remaining brown sugar evenly over the top.  Cook 20 minutes uncovered on 375, then raise heat to 400 and cook another 5 minutes.  We then cooked the pans carefully on broil for an extra 5 minutes in an attempt to crisp the skin a bit.  It still could be more crisp if it were up to me, but the party goers seemed to like them in the state that they were in.  Serve warm.

Toddler learning

One of Isabella's new loves is time.  "Ok, I will go but not for three minutes." "Ok daddy, but in 30 minutes."  She knows the names for time, but she doesn't understand what time is relative to her everyday life, of course, but we are working on it.  I try to set a timer when she says something like that and I try to assign times to certain things like until naptimes that way she can start to grasp the time that she is saying.  This is the kind of stuff that I love about having children that are this age.  Yes, they repeat everything that you say, and yes, that is definitely frustrating when you have a slip and accidentally utter a four letter word that you wish that your children would never repeat ever.  But outside of that, they are constantly amazing you with new and exciting things that you realize that they never knew. 

I am very lucky that a large majority of the people in our family realize the importance of education and learning and are constantly helping us grow our children.  From their aunts quizzing them on colors and shapes of toys while they play, to drawing letters on this drawing toy that we have, to Grace reading books to them, to my mother constantly teaching them new and exciting things.  This, I think, has helped foster their interest in learning.  Plus, as controversial of an issue as this is, we do not limit 'screen-time' in our family.  We don't watch a lot of TV everyday, but the TV is always on as background noise.  However, this has helped both of them to learn new things on their time and at their speed.  Isabella spends a lot of time watching educational programs, matching games, puzzles, and things that.  Yes, there are times when it feels like she is a crack-fiend on the search for her next fix, but then we just have a break from the phone for awhile and let her focus her attention on other things.  This time that she has spent with 'her phone' has helped her to practice fine motor skills, reinforce her letters from an early age, and more easily learn colors and shapes.       

When Isabella first started being able to walk around in stores without running off and acting like a fool, we were walking around in Target. Corry and Grace were shopping for new water bottles, and I was entertaining Isabella down on one of the end caps with the coffee travel mugs and she says, "This cup has coffee in it."  It was such a simple sentence and six of the ten million words that she said that day but it was just one of those times when you are like when did she learn what a coffee mug was?  As much baby fever as I have lately, I LOVE this age that my children are in.  It's the age where you can actually see their little brains working to figure problems out.  It's the age where they can begin to communicate their problems with you instead of just sounding like a monkey all the time repeating the same sound.  Well, Silas is still kind of in that phase, but I am going to blame that on him being stubborn!  It's also the first stage that they have been in where I have stopped comparing their development to other children. 

In the first few months of their lives, I was constantly comparing their growth and development to other children.  Isabella was a slow weight gainer.  Silas was an early teether and an early walker but a slow talker.  This is absolutely one of the worst things that you can do because no two children are exactly alike.  Even the doctors will tell you most items on their development chart have a range associated with them.  Like sitting or standing unassisted has like a 9 month to one year range that is 'normal' for children.  It's hard to not do it but eventually I think that you realize that it doesn't matter when your child is doing a certain activity, so long as they are doing it according to their normal. 

Isabella is now in a stage where you can have a complete conversation with her and she is learning new concepts everyday.  This is amazing to me and so fun.  I love that she can tell me about things that she did during the day and that, even though half of the time it's to tattle on him, she can recount things that Silas did during the day as well.  It makes me feel like I am there more during the day.  She is also better able to explain her feelings and what she is upset about instead of just screaming and crying like a banshee when something is wrong. 

I love teaching my children of all ages new skills and new information.  I love seeing their eyes light up when they practice a skill that they just learned or talk about a subject that they just learned about.  It is so exciting to see their brains developing and changing as they age.

2014 New Year's Resolutions Update - Week 1

I am currently still running the Price Convalescent Center with the babies.  Because of this, I am less than excited about taking the time out to blog and I am sorry about that.  I figured that today would be a good day to provide my weekly update on my resolutions. 

2014 New Year's Resolutions
  • Personal
    • Post one blog everyday.
      • I have actually been doing awesome at this one.  I posted one everyday so far and that is amazing considering that I have been less than motivated to do anything this week except sleep and deal with sick kids.  When things slow down a bit, I plan to make a more formal schedule of when I want to post certain types of blogs.  Until then, they are going to be more random.   
    • Go on more dates with my husband. 
      • So far so good.  Last week we were invited to a friend's house to have dinner with some other couples.  It wasn't the traditional 'date' but since it was almost an hour and a half drive one way away from our home, it definitely provided us a night to step away from the kids and spend some quality time together. 
    • Start going on 'dates' with my kids, i.e. manicures with Grace, play-dates with Isabella, etc. 
      • This has not happened yet, but let's just blame it on everyone in our house being sick.  I will work on it. 
  • Home
    • Do 52 'Pinterest projects' for the year.
      • I have already completed 2 of the 52 promised ones for the year, so we are off to a good start.  I have ideas for a few more for the month but nothing solid yet.   
    • Stock freezer with prepared meals once per month.
      • My weekend to grocery shop and meal plan for the month is coming up soon.  I have planned to add at least a few meals to that meal plan to cook one month.  No plans so far as to what those meals will be. 
    • Do 12 'preps' for the year. 
      • Nothing so far.  Plans need to be made.   
  • Health
    • Drink more water. 
      • This has also been going well.  I have a Contigo 32oz water bottle that makes it easy to get in a large amount of water at work, since only two of those equal the amount of water that you should have for the entire day.  I had forgotten how much you have to go to the restroom when you drink the proper amount of water.  There has only been one day this last week that I have had less than 64 oz of water, which is awesome. 
    • Do some form of exercise 5 days per week. 
      • Failed so far.  I did sign up and take the class to be able to use the fitness center at my job, so that's a step in the right direction, at least.  We have treadmills and elliptical machines which I am excited about and a few other machines that I probably would not use to be honest with you.  This will be helpful to use while I am on lunch and need a workout.   
    • Take all medications and vitamins regularly.
      • I failed again on the weekends, but during the week I have been doing awesome.  It is easy for me to stay on schedule and take all my medications like I am supposed to.  Something about the weekend throws off that schedule and makes it impossible somehow.  I am going to get better. 

Overall, I have been doing well with all of this.  Since the beginning of the year, I have also been doing better with a lot of other things.  I have been eating better and in much smaller portions.  As of the last count, because of that, I have lost almost 4 lbs this last week.  I am definitely sticking with that.  I have also been doing a really good job at ensuring that my appearance is kept up with.  Over the last few years since I had my younger children, I have lost a bit of myself and this year I am determined to get that back.  I have been getting back into wearing makeup every, wearing heels to work and dressing in cute clothes and not totally for comfort.  I also have started using a hair straightener, which I have had in my bathroom for years and never touched.

2014 - 52 in 52 #2 - Baked Ravioli

I first pinned this recipe last year sometime.  I am always looking for simple and quick recipes for the weekdays.  The last thing that I want to do is come home after a long day at work and more than an hour and a half commute home and cook dinner.  This is one of the main reasons why I wanted to try freezer meals – I am not in the mood to cook dinner by the time that I get home from work. 
 
So I found this recipe for something called baked ravioli.  Shortly after I pinned this recipe, a woman on Youtube named Amy with the handle dreamflight6000 made this video where she made this recipe for a baked ravioli.  Now, you have probably read me talk about Amy before on another post – I love her!  She is really funny and smart and an excellent mother to her two boys (and pregnant with a third!), and she is a self-proclaimed picky eater.  I knew that if she and her family loved this recipe than certainly I could get my hungry albeit sometimes picky kids to eat it.
 
In my meal plan for the month of Dec-Jan (I decided that I need to do my meal plan for the end of one month and beginning of the next – better for our budgets and my sanity), I decided to try to make this meal.  I bought the ingredients and forgot about it.  If you follow me on Facebook or talk to me in person then you know that my home has been an acting convalescent home for some time with this crud that we are all passing around.  Well, Friday it came to a head with my son.  He was feeling awful and whiney, and needing to be held by someone and rocked most of the day.  For anyone who has now or who have ever had a toddler, you know those days.  I had no idea what I was going to make for dinner.  Luckily this recipe came to mind and it ended up being perfect. 
 
Isabella is a busy girl lately.  She just turned three, and she is all about helping.  I don’t want to stifle that help, because I don’t want her to turn into a sloth or (further) demanding toddler.  She is all about wanting to help in the kitchen.  I would LOVE to have the storage space for one of those Learning Towers, but alas, this rental that we are in has NO storage space, hence the reason why we had to build shelves to use our coat closet as a second pantry.  I will further explain that later.  She loves to help me cook, but since we have a gas stove, I am less than excited about the possibility of her doing that, especially since he will want to follow closely behind her and he has no natural apprehension towards fire like she does.
 
This recipe was awesome for them because it was simple and they were able to help.  It honestly is just laying several different pieces together and tossing it in the oven.  You could easily make this your own by substituting different kinds of ravioli, or different kinds of pasta sauce, etc.  We just used regular cheese ravioli and a traditional pasta sauce.  I do fresh grate my cheese always so that was just standard mozzarella from the store.  Let me know what substitutions you would do and I will check them out!
 
Baked Ravioli
Prep time: 5 mins
Cook time: 45 mins
 
Ingredients:
1 28 oz jar pasta sauce
1 package frozen raviolis (do not thaw)
8 oz grated mozzarella
½ cup Parmesan, to taste
¾ Tbsp Italian seasoning
1 tsp Garlic powder
 
Instructions:
Grease a 9x13 pan liberally with cooking spray and heat your oven to 400(check) degrees.  Spread about ¾ cup pasta sauce in the bottom of the pan.  Layer half of the frozen ravioli over the sauce in an even layer.  Spoon half of the remaining sauce over the top of the ravioli.  Top with half of your mozzarella cheese and half of the Parmesan cheese.   Repeat that layer ensuring that you use all sauce and cheese.  I sprinkled the top of this with Italian seasoning and garlic powder to give it more flavor.  You can certainly omit those if you feel like you get enough flavor from your sauce or pasta, but I felt like it would need a little something.  (The picture above is what it looks like right before it goes into the oven.  No after picture - sorry we were too busy enjoying!) 
 
Cover with aluminum foil and bake for 30 minutes.  Remove foil and bake another 10-15 minutes until cheese is browning and completely melted.  Let stand 10-15 minutes after removal from oven before serving to allow the dish to set and the sauce to not be so runny.
