Like most Americans, I re-started The Diet again yesterday. The Diet is capitalized because at this point it deserves to be a proper name. I have been on and off this diet several times a year since 2011. It isn't rocket science; it is counting calories. Pure and simple. It works really well if you stick to it. Unfortunately, it's just like the old adage that you can lead a horse to water but you can't make him drink. You can tell a woman how to diet and lose weight but you can't make it happen unless she is ready. This year, I am ready.
I haven't been nearly as psycho with calories as I have been in the past and I am hoping that it is going to help me stick to it. In past rounds of the diet, I have eaten no more than 1,100 calories per day and that isn't anything that I can stick to. With all my other rounds of this diet, I have been meticulous with weighing my food and ensuring proper portion sizes. Luckily, since we did this in the past, I know what a proper portion size is for certain foods and I am able to judge approximate calories based on certain items. I have a lot of confidence that this is going to be something that I can stick to this time.
With that being said, I did awesome on my diet yesterday and today so far. Today I was back at work and it is usually easier for me to stay true to a diet while I am at work because I don't carry cash for the vending machines and there are only a select number of things that I bring from home.
For breakfast, I packed a chocolate Belvita. I LOVE these crackers. I am not sure how long they have been around but we found them during our last diet round and they are awesome. A pack of four of them are less than 250 calories, I think. For a snack I packed baby carrots. I like them because they have a mild flavor, don't need to be refrigerated, and satisfy that 'crunchy' craving that I feel like I have sometimes. For lunch, I packed a salad with Romaine lettuce, baby spinach, pieces of cucumber, 2 hard boiled eggs and an avocado. Normally, I smash up half of a small avocado in my salad and add an ounce of cheese. This time I figured I would just use the entire avocado and not have cheese. I thought that it would still provide the creaminess that I would have found in the cheese. Big mistake. It just turned into a weird squishy salad with too much avocado flavor. Lesson learned.
We also made our homemade healthy Ranch dressing. This stuff is awesome. Now, if you go straight from regular, full fat Ranch dressing to this, of course it isn't going to taste awesome, but it is an amazing substitute.
The plan is to update on how this diet is going once every two weeks or so.

"Diet" update
So, sometime in late March my husband and I got back on the diet that we were on when I was pregnant with Silas. Before I get chastised for dieting while pregnant, I wasn't technically dieting; more so just eating better and significantly less calories, but still more than enough to grow a baby. More than enough to grow a huge baby, actually. I mean, he was 10lbs for goodness sakes! Anyway, in the beginning of my pregnancy, while monitored by my OBGYN I lost 25lbs and Corry lost almost 65lbs. Then I got to the point where I was 9 months pregnant and said 'screw a diet' and gave up.
In March I convinced myself that I wanted back on the diet, but mostly because I knew that I had to go to my endocrinologist and he always has an issue with my weight. Overall, even at my weight, and except for the thyroid cancer 10 years ago, I am a healthier person. I have a good heart rate. I have a good/low blood pressure. I have excellent blood sugar. I have no real problems due to weight (yet). I know that odds are good in the future I will develop some issues, especially since I have a family history of diabetes and heart issues, so that is one of the reasons why I want to get this weight off.
Back to March - I wasn't ready to be on a diet. Well, I was ready to be on a diet but I didn't have the support that I needed from friends/family so it wasn't happening. I don't think that the general public really understands what a difference it can make for someone who wants to be on a 'weight loss' program to have a strong support system. For me, it's all the difference in the world. I was not able to stick with it for more than a few days without my husband totally on board with me and without my family support system there.
Since we now have Grace living with us, it became even more apparent that the time to get back on the better eating plan was now back upon us. It is so important that we teach all of our children how a positive relationship with food looks, steps to avoid being an emotional eater and how to have a good body image. We are working on it.
Fast forward to 7/16/2013 - the first day of the rest of our lives. We are 100% dedicated to this and we have been rockin' this new life. We don't really have a caloric goal for every day, per se. Corry figured out our BMR (basal metabolic rate) and thus the number of calories that your body should burn daily while not performing normal activities. We are really striving to get around 1200-1300 calories per day, but not really putting a number to it. If I get more than that, I am not going to go out and do anything crazy, but I will go and work out that night to ensure that I get some positive-ness into that day. We are having some cheats and we are still eating 'real' food, so we don't feel like we are starving ourselves, but we are very strict on portions. We learned this the first go-round. You have to measure everything that you eat. If you don't, you will grossly overestimate the amount of a true portion. We look up all calories and track them daily in a journal that we fill out together so we keep each other honest. We weigh in on Sundays (who am I kidding - I weigh myself like 9 times per day - but I only track the weight that I see on Sundays). I use www.myfitnesspal.com to track my foods during the day since I would definitely forget something and that most certainly keeps me honest.
It is definitely not easy. My company announced our second quarter earnings this week and so our department is celebrating an awesome second quarter by providing snacks and drinks everyday to all folks in our department. This is both awesome and a trick at the same time. The good news is there is always diet soda - which I know is not the best because of the artificial sweetener, but it's better than regular soda with the calories and the sugar. However, there are barely appropriate snacks on that cart. Luckily, during this second week my stomach is starting to adjust to the lesser amount of food and I am finding myself less hungry than I was during the first few days. Really for me, that's the kicker - if I can get through those first couple of days then I am golden usually.
I will say that this week has been more difficult than normal. I am dealing with the surge of hormones because of PMS (TMI, I know, but we are being honest here...) and wanting to eat everything within a 100 mile radius. I am finding it more important to be drinking a ton of water during this week not only to keep the bloating at bay from the aforementioned condition, but also to keep those cravings under control. The majority of time, at least for me, if I think that I am hungry, I am really either bored or thirsty. I have been trying to keep at least one bottle of water on my desk at work and any time that I am bored, thirsty, or hungry, I try to challenge myself to drink the entire thing. Unfortunately, for most of the day that means I am running to the restroom like 9 times in 3 hours, but it is well worth it for the health benefits associated with getting enough water.
Other than wanting to eat cheese enchiladas with dessert and a margarita blamed on PMS, I am doing excellent. I feel amazing. We are starting to walk at this middle school track by our house. I spent over an hour outside today with my husband using a lawn mower (which sucks) and weeding my garden. *sigh* My garden is in such a state of disorder right now it is sad. I am working on it though. I feel amazing. I am starting to be able to see the lost weight in parts of my body and that is making it easy to keep going.
I hesitate to tell the amount of lbs that have been lost this time because 1) it seems unbelievable since the number is rather large, and 2) I know that I will get some flack because most of the time you see this amount in one of those fad diet programs and I definitely don't think this is that. I think that I could see myself living this life for the rest of my life because I am not depriving myself; just sensibly limiting what I should not be eating to an absolute minimum.
I will share the amount even though I am scared to because I am proud of what I have accomplished and it has been some work over the last few days. As of this morning, I am down 18.6 lbs in 9 days. I have 3 more days until my official 'weigh-in' for the week so that still gives me a bit of time. The weight loss is slowing down a bit which I expected. I know from the last time that the first week you lose a tremendous amount of weight and it's basically a jump start. I am not taking any supplements, drugs, or on any type of special programs. I am definitely in this for the long haul, because ideally I have over 100 lbs to lose.
I would like to keep blogging this journey, even if no one reads these because I would like to have a history of this to look back on when I accomplish my goals (that I have yet to set) in this new life that I am setting up for myself. If you have any weight to lose, I encourage you to join us. Corry and Grace are both doing excellent with this as well - we are all losing similar amounts and even my mom has joined in and is making 'skinny' meals and snacks while over here. I appreciate all of the support that I am receiving during this time because this is definitely one of the hardest but also one of the best things that I can do for myself.

Sick kids & a day update
Both of my kids are sick right now.
Sigh... If you have not ever been within 100 yards of a sick kid let me spell out what this means. This means that there has been more crying and whining in my house today than there has been in like the last two weeks all put together. Think of how whiny and gripey you feel when you are sick, especially if you are a man, and multiply that by like ten... thousand. They want you to hold them but without touching them. They want you to lay next to them but you can't because they actually feel like they are a live convection oven because of the fever. They want to eat something but whine and cry and fight you the whole time because they can't think of anything that they want to eat. All in all it's an awesome good time.
I previously had asked for the day off work today because I needed to go see my thyroid doctor in order to get a new prescription of thyroid medicine, and to go to the eye doctor to get a new contact prescription, so this is shaping up to be the most amazing day that I have had in a long time. I hate when I take time off work and feel like I am busier than when I am at the office. Call me lazy but I love just chilling at home when I am taking days off work - feels like I get some catch up on rest. However, that didn't happen today... maybe the next time.
I always have a lot of anxiety before I go to my thyroid doctor because he always gripes at me about my weight. Let me start off by saying that I know that my weight is a problem and have finally got to a point where I am ready to do something about it. We have been on this diet for three weeks on Monday and according to my scale at home, I am down 16.2 lbs, which is pretty awesome! With that being said, since I started going to see this doctor, I have been in the same weight range. I have fluctuated up and down because of my normal changes, two pregnancies, and my diet the first round. Unfortunately, thanks to having no thyroid now for 10 years (this is ridiculous that it has been 10 years) I have to see him at the very least twice a year.
This time I am vowing to be different. I told him that I wanted to see him again in 3 months - I got him to agree by saying that I wanted him to monitor this weight loss since I really don't have a primary care doctor. For the last three years I have used my OB as my primary care doctor since I was either pregnant or immediately postpartum that entire time. Let's say that I am having a difficult time adjusting. That is for another post.
Luckily, he was nice today - partially because of this giant bus crash that we had near his office that was being dealt with at the time of my appointment, and partially because I was able to tell him about my success so far with this diet. My next appointment is now scheduled for some time in July; we will see how far I have gone with this weight loss at that time. In three months, I am hoping for 30-45 more pounds down.
I stopped and picked up Subway at the Lake Worth Subway, which must have searched far and wide for the worst employees ever. I have been there several times and every time that I go I have awful service. No one acknowledges you when you walk in. They have personal private conversations with each other while making your sandwich, and you often have to wait until they finish what they are talking about before they will address any need that you might have as the customer. It looks like we will be looking for another Subway.
I really love my eye doctor's office. I see Dr. Stephen Ference with Ference & Assoc. I hate that it's inside of a mall because I feel like I need to shop when I go there. He and his wife run an awesome practice. They are very thorough and offer excellent customer service. I would definitely recommend either one of them to anyone that I know. Their office staff is super friendly and I have never been disappointed with any time that I have ever been there.
All in all it's been a crazy day. This bus crash is all over the news, my kids are both laid up, sick and whiney, and we are looking forward to our camping trip next weekend.

52 in 52 #6 - Light Ranch Dressing
So, it's been a little more than a week on the diet. Can you hear my excitement? This week I have been dealing with MAJOR chocolate cravings like never before. My sister gave me a tip a long time ago when we were both first on Atkins when we were like 18 or so that if you have a craving for sweets then you should eat a pickle or an olive. I have been downing the olives at work like crazy - I say like crazy but I mean 2-3 per day. Unfortunately you have to keep a watch on that as well because there is a load of sodium in regular green olives.
I am on a salad kick right now since we don't eat a lot of salads when we are not on our diet. I make a huge salad for lunch and the entire thing is like less than 390 calories, which isn't too bad. I have been using this awesome app called 'myfitnesspal' to keep track of what I am eating everyday, the calories that I am allowed to have, my current weight, etc. I really like this app because it has records of almost every food that I could want to eat and the calories that are in that food. Once you submit your food, water and exercise for the day, the app calculates a weight for you in five weeks if everyday was like that day. That is REALLY motivating. It will also do a rough calculation on the calories that you burn during certain exercise and changes your calorie count to net. That is neat as well. This app is really a big help during the day to keep me motivated and on top of this diet. I have already lost 12.4 lbs!
Back to the salad - my husband, being the supportive awesome guy that he is, found this recipe on Pinterest for a light ranch dressing. I was suspect of anything that claimed to be a large portion with little calories. However, my love for Ranch dressing won over my suspicion. I have tried other dressings and I still can't help but be loyal to Ranch dressing. We were raised eating it on salads and I just can't stop.
Light Ranch Dressing
1 cup Dannon Oikos plain Greek yogurt
1 packet Hidden Valley Ranch mix
1/2 cup 1% milk (we used skim and it was just fine)
Mix all ingredients together and chill at least one hour before serving.
We put the ingredients in a jar and shook it up. I take the whole jar to work and just pour a bit out when I am ready for lunch. The entire jar has 255 calories compared to 75ish (low estimate) calories for 2 tbsp of normal Ranch.
This dressing is amazing! I can't even tell that it is diet. It has a different underlying flavor because of the Greek yogurt but I think that it is awesome and I would even eat this if I wasn't on a diet. You definitely have to make this if you love Ranch dressing like we do!!

Dieting sucks
Being on a diet sucks. A lot. And the worst part is, I am not even on a diet yet.
Back when I was pregnant with Silas, Corry went to the doctor for the first time since he was a newborn, I think. The doctor warned him about his blood pressure (which he knew was previously high) and his weight. He made a resolution to eat better and much fewer calories and lost 70ish lbs in just a few months. During that time, I also starting eating better and cutting out all the junk food, sodas, etc. I lost about 30 lbs in the same amount of time. And then I was 9 months pregnant and feeling like Godzilla and I was ridiculously un-excited about eating better, so we started eating horribly again.
A few months ago, we decided that we wanted to get back on the eating plan from before and just never have. My job annually hosts a "biggest loser" competition to inspire folks to get in shape, eat better and exercise. I have never participated in said competition. I don't want to sign up this year but I did tell my husband that I want to get back on the eating plan during the time that my job is hosting this event. This should give us enough time to be on the plan so that once the competition is over, we should be able to easily maintain and further increase the weight loss that will have occurred up until that point.
One of the most difficult parts of being on a restricted eating plan is not calling it a diet. You will notice that even if you say the word diet, you feel immediately angry. I try to say restricted eating plan, or something like that. I try to not tell many people when I start something like this because I don't want to constantly talk about it when they ask how it is going, etc. I think it's that I am also always afraid of failing and having to be accountable to someone. I guess this is completely the opposite of that by spreading this news on my blog?
Once the first week is over generally I feel better. The first week is spent either starving or detoxing from all of the junk that I have been consuming recently. We are strictly just lowering calories. This was the advice of the doctor. I am still trying to eat lots of fruits and vegetables and not just eat like one item totally 1,100 calories for the day. I also am trying to eat more olives, pickles, and 'sour' type items because I have developed quite the sweet tooth over the past few weeks and am going to try to kick that habit. Eating olives and pickles has helped me with that in the past.

1 Torta bread (we found these at Costco)
2 cups coffee w/ 1/4 cup skim milk and 1 tbsp coffee creamer

My goal at this point is to get right at or under 1500 for the day. This is a bit less than when I was on this plan before and I was able to lose some weight. I have a tendency to snack at work because I feel like I am hungry. I am trying to combat this in two ways. I am bringing 2-3L of unsweetened tea to drink during the day to remind me to drink liquids since I could just be thirsty. And two, by eating protein (Greek yogurt, eggs, etc.) any time that I eat.
I am also going to follow my job's plan and weigh once a week. I am, of course, not going to reveal the number but I do plan on reporting back how much weight I have lost. Wish me luck!

Back when I was pregnant with Silas, Corry went to the doctor for the first time since he was a newborn, I think. The doctor warned him about his blood pressure (which he knew was previously high) and his weight. He made a resolution to eat better and much fewer calories and lost 70ish lbs in just a few months. During that time, I also starting eating better and cutting out all the junk food, sodas, etc. I lost about 30 lbs in the same amount of time. And then I was 9 months pregnant and feeling like Godzilla and I was ridiculously un-excited about eating better, so we started eating horribly again.
A few months ago, we decided that we wanted to get back on the eating plan from before and just never have. My job annually hosts a "biggest loser" competition to inspire folks to get in shape, eat better and exercise. I have never participated in said competition. I don't want to sign up this year but I did tell my husband that I want to get back on the eating plan during the time that my job is hosting this event. This should give us enough time to be on the plan so that once the competition is over, we should be able to easily maintain and further increase the weight loss that will have occurred up until that point.
One of the most difficult parts of being on a restricted eating plan is not calling it a diet. You will notice that even if you say the word diet, you feel immediately angry. I try to say restricted eating plan, or something like that. I try to not tell many people when I start something like this because I don't want to constantly talk about it when they ask how it is going, etc. I think it's that I am also always afraid of failing and having to be accountable to someone. I guess this is completely the opposite of that by spreading this news on my blog?
Once the first week is over generally I feel better. The first week is spent either starving or detoxing from all of the junk that I have been consuming recently. We are strictly just lowering calories. This was the advice of the doctor. I am still trying to eat lots of fruits and vegetables and not just eat like one item totally 1,100 calories for the day. I also am trying to eat more olives, pickles, and 'sour' type items because I have developed quite the sweet tooth over the past few weeks and am going to try to kick that habit. Eating olives and pickles has helped me with that in the past.

1 Torta bread (we found these at Costco)
2 cups coffee w/ 1/4 cup skim milk and 1 tbsp coffee creamer
