November Meal Plan

We are in our third month of working on a monthly meal plan and I finally feel like I am getting the hang of it.  In earlier months, I was always forgetting something.  The first month I totally spaced on what I was going to serve for breakfasts for any of our family.  Then last month, I forgot to plan what Corry, Grace and myself were going to take for lunches.  Overall, this has been going well though.  I feel like I am saving money on groceries overall because I am making less shopping trips, resulting in fewer impulse buys.  Plus, I have been buying produce through a local CSA (review pending) thus reducing our produce bill to $15ish a week. 

As a reminder, I will run through the general steps that I follow to get a monthly meal plan.  I first look at a calendar that has our activities on it to figure out how many meals I will need.  I know that for November, we are camping two times for a total of 5 nights that I will not need to include in my standard meal plan.  I will plan those, but I will do that separately.  Based on where we are in the month and how many meals we are skipping, we need 23 meals for this month.  Then I go through my Pinterest, and my basic list of meals that I know that our family likes and decide what I want to make.  I usually keep it to the favorites and add in a few new recipes.  I also figure out how many meals that I am making to put in the freezer.  Normally I budget about 1-2 meals a week to make and stash in the freezer.  This post will cover the meal plan portion.  I will continue on the next post with the grocery list and how I plan my shopping trip(s). 

November Meal Plan
  1. Pinto beans and cornbread
  2. Beef chili - we eat ours with fritos and cheese
  3. nachos - chips, cheese, jalapenos, beans, and taco meat with extras
  4. pulled pork (recipe post to come), pasta side dish and veggie
  5. country style pork ribs, mashed potatoes, and veggie
  6. Grilled steak and chicken, rice side dish and veggie
  7. Baked tacos
  8. Stuffed bell pepper casserole
  9. salsa chicken & Spanish rice
  10. pizza roll ups & garlic cheese bread
  11. chicken noodle soup & grilled cheese
  12. chicken spaghetti
  13. breakfast for dinner - pumpkin pancakes and sausage
  14. chicken chili - same as beef chili for fixin's
  15. chicken fried rice and egg rolls
  16. ravioli with homemade spaghetti sauce & garlic cheese bread
  17. beef tips, rice and gravy
  18. cheesy chicken and rice
  19. baked tacos
  20. baked spaghetti (recipe post to come)
  21. salsa chicken and Spanish rice
  22. nachos
  23. Grilled steak and chicken, red beans and rice side dish and veggie
Those are our basic meals.  I also planned this month to make stuffed shells, baked spaghetti, 2 more chicken spaghettis and another round of chicken chili for the freezer. 

Remember that even though my meals are numbered, this is just a list of possibilities for the month and not a day by date mandate.  There are times when I get home and don't want to cook a meal like chicken spaghetti, so I might pick a chicken chili that day.  It seems to work easier and allows us more flexibility on days when the meal that would be listed for that day isn't a possibility.  Recipes that I have available on my blog are linked above and I will be posting more in the days to come.

52 in 52 #9 - Homemade Taco Seasoning

I have had my eye on this pin to make my own taco seasoning for months.  This is one of those items that I would not have previously brought up to my husband.  My husband is very practical and one of the things that he always wants me to think about is the amount of time, effort and money that it would take to make something personally versus the amount of money that it would cost just to purchase something pre-made at the store.  Since a packet of taco seasoning is like $.80 at the store and I figured that he would be less inclined to indulge my desires to try this recipe at home.  Luckily he was feeling generous that day and he actually seemed like he was into it. 
 
The original pin that I used as inspiration is here.  I was very interested in at least trying this because I figured that it would solve at least a few of my issues with the packets of taco seasoning.  We eat tacos, salsa chicken and other recipes that require taco seasoning a lot, so we were always buying at least a few packets of that seasoning mix when we went to the store.  We buy a lot of spices for chili mix and other cooking adventures so I knew that we would have everything on hand, I was always just hesitant to try a new recipe because I didn’t want it to be horrible.  Also, with the packet of seasoning, I was always getting HORRIBLE heartburn with it no matter what we put it in.  I am not sure what is in that mix that causes that but this homemade version definitely does not do that, which is awesome. 
 
Homemade Taco Seasoning
Prep time: 10 minutes
 
2 Tbsp chili powder
½ tsp garlic powder
½ tsp onion powder
½ tsp red pepper flakes
½ tsp oregano
1 tsp paprika
1 Tbsp cumin
2 ½ tsp salt
2 tsp black pepper
 
Combine all ingredients in a small bowl.  Mix well and store in an airtight container.  Use 2-3 Tbsp per 1lb of ground meat depending on how flavorful you like your dishes. 
 
This seasoning blend tastes amazing in any dish that you would use the store bought mix in.  There are several different things that I love about this mix:
 
·         It’s customizable – you can add more or less salt if you like.  We use smoked paprika in place of regular paprika and we also usually add more red pepper flakes since we like ours a bit more spicy than some other people.
·         You don’t get that gross, heartburn-y feeling after eating this mixture.  There are no preservatives that aren’t already in the spices themselves and there is no MSG to leave you with an upset stomach like the package mix. 
·         We buy our spices in bulk most of the time, so this recipe ends up being fairly comparable as far as price is concerned to the package.  It will cost maybe a few cents more per use but to have something that tastes much better and you can customize makes it totally worth it.  Plus, people are impressed when you say that you make your own spice blend. 
 
You can buy cheaper mixes and get a bland result but if you are looking for something to add some kick to your dishes that require a taco seasoning packet, give this one a try.  Let me know what you would add or remove to make this blend different for your family.  I am always in the market for substitutions to try.

Surprise date night tonight

Today my mother and my younger sister decided to take the three munchkins to Ikea in Frisco while the rest of us were at work.  Taking three children under 2.5 out in public for several hours is an undertaking and I don't recommend it to the faint of heart.  There are guaranteed meltdowns, countless diaper changes and not enough goldfish crackers in the universe to keep everyone satisfied. 

Luckily it all went well.  Items that were needed from Ikea were purchased and no one had a thermal meltdown in the store.  Naps were had by a few on the way home.  It turned out to be a decent day and an super decent trip outside of the house with the kids. 

Unfortunately, since Frisco is more than an hour away and they are tearing up and working on every freeway in between the two locations it becomes impossible to get over there and get back in a timely fashion.  Mom decided while stuck in traffic that she would take the kids and the Armada over to her house, Corry and I could go to dinner and then later on this evening when we were done she and dad would bring them back.  I like for my father to see the kids at least once every two weeks without intruding too much since mom gets more than her fair share of them during the week. 

Funny Confession Ecard: I don't care where we eat as long as its not at any of the 12 places you just named.Corry and I always have a 'discussion' about what we are going to eat which sounds a lot like this ecard that I read the other day (on the right)and we finally decided upon Torchy's Tacos and a cupcake from Red Jett Sweets.  We then just came home and chilled out - talking and being together until the kids came home.

I am so tired that I am falling asleep while trying to write this blog - not a good idea.  I am going to go to bed and hopefully will have something more interesting to write about tomorrow.
